(More customer reviews)I wanted a Santoku knife, so my husband set about researching knives for a gift for me. I currently have a Wustof set of knives and they are dull, chipped and don't sharpen well, so I didn't want Wustof (granted, they are about 12 years old but even after 2 years they wouldn't sharpen well). I needed something sharp and with a short enough blade for chopping produce.
Again and again, he found stellar reviews for Global knives, with lots of comments about how sharp they are and how long they stay sharp. He bought me a 2-piece set that is not currently shown here, but it includes this vegetable knife along with a paring knife (GSF-15). It's not called a Santoku knife but seems to act like one. As promised, it is TACK-sharp!!! It makes short work of everything I chop and is a real pleasure to do food prep with (I usually hated chopping with my Wustof knives, which were never this sharp to begin with). I've had this knife for about two years and it is just as sharp today as it was on day one. No sharpening needed so far, and I use it a few times a week. I automatically grab this knife when I have something to chop, and friends who like to cook as well are eager to help prep for dinner when they're here!
It feels great in the hand, is nicely balanced, and has a nice weight to it. The "scallops" on the blade do cause sliced veggies to fall off it easily if they stack on top of each other, so I thoroughly clean my counter before chopping so that errant zucchini slices don't have to go into the trash. My only complaint is that if you chop something starchy, like raw potatoes, it gets a film on it if you don't wash it right away. A little rubbing alcohol takes it off, though.
I will gradually be replacing all of my Wustof knives with Global knives as I can afford to. Chefs will tell you to buy the best knives you can afford...these are it. Worth every penny!!
